The Italian Culinary Academy, located at The International Culinary Center in New York City, offers aspiring Italian cooks at all levels the most well-rounded and authentic Italian culinary training available anywhere. With a curriculum designed and overseen by acclaimed chef and Dean of The Italian Culinary Academy, Cesare Casella, our flagship program, the Italian Culinary Experience, offer students the exciting option to live and train in both New York City and Italy.

The Italian Culinary Experience
The Italian Culinary Experience will expose you to the language, cuisine, and culture of Italy's 20 regions. Our 29-week program trains students in both New York City and Italy, and is the most authentic program available to aspiring Italian cooks. Using hands-on Total ImmersionSM method, you are exposed to authentic Italian ingredients, techniques, and tradition in real-world settings.

Here are some of the areas you will study while attending our school:

  • Fresh and filled pastas, including ravioli, agnolotti and tortellini
  • Fillings and sauces
  • Risottos and polenta
  • Pizza and flatbreads
  • Antipasti
  • Cheeses
  • Fish and shellfish
  • Meat and poultry, including game, lamb, rabbit, chicken, duck, turkey, pigeon and quail
  • Italian dessert and pastry
